Sauces, Macaroons, & BBQ! Oh My...

Happy late August, Everyone! We're just dropping a quick post to let you know that the holiday season... I know, I know, is approaching. Meaning that... we have a lot of things coming up over the next few months. There might be a little repetition here, but we want to make sure that we're covering everything coming down the pike!

 

Sauce Class 101! We've had requests for this class over the last few months, and we want to make sure that those of you that requested this see that we've put some dates on our calendar. This is a 2 hour class learning the basic 5 French Mother Sauces (Béchamel, Velouté, Espagnole, Hollandaise, and Tomato). Each sauce has a distinct characteristic: Béchamel sauce is white, veloute sauce is blond, Espagnole sauce is brown, Hollandaise sauce is buttery and tomato sauce is red. One look at a sauce and you should quickly be able to ascertain the mother sauce from which it is derived. The reason mother sauces have stood the test of time is that they are incredibly versatile and provide the basic foundation on which you can build dozens of other sauces. For example, if you add diced shallots, white wine or vinegar, tarragon and peppercorns to Hollandaise sauce, you have a derivative known as béarnaise sauce! Start by learning the basics of sauce-making and then get creative in the kitchen. With a firm understanding of liquids, thickeners and seasonings, you’ll soon be able to make mouthwatering sauces of your own hat French chefs would be proud of. In addition, once you know the basics, you’ll be better able to adapt your recipes for flavor or lower fat options. Book your class HERE for FUN & education!

 

Macarons!!!!!!!!!!!!! You say Macaroons, we say Macarons! Yes, they're totally different! When you think of macaroons, do you recall those sweet lumps of shredded coconut with a golden crust? Or do you think of those vibrantly colored airy meringue sandwiches that the French refer to as macarons? Though these cookies share similar names, they look and taste different; they do, however, share a similar past. We will be teaching/making Macarons, the colored airy meringue sandwiches filled with chocolate ganache and buttercream! We might even have a little wine and snacks while we wait for these beauties to bake and cool! If you're interested in learning how to make these decadent 'circles of love' for the next birthday event you have or for the holidays to impress everyone with your baking abilities, then book your class HERE. We have four classes to choose from!

Also be please advised that macarons are made with ground almonds or almond flour. For those with a nut allergy this class may not be the best for you.

 

NO summer or fall barbecue is complete without a rack of finger-licking ribs!

With that being said, we're bringing you BDC BBQ! We're going to have TWO BBQ Events in the month of October. Ok, this is going to be a fun evening! Saturday evening we will learn how to properly 'rub', and glaze your amazing St. Louis Style rack of ribs to create tender, fall-off-the-bone oven-baked ribs (not everyone has a smoker, but they'll taste like you do when we're done!). You will have one full slab per couple, or a full slab by yourself! Additionally alllllllllll of the fixings provided by us- Various deviled eggs as your starter, potato salad, coleslaw, baked beans, and a dessert! Let's not forget that we'll be pairing these delicious ribs with some fine wine (beer will be available)! Best part? You will take home our delicious homemade BDC Rub, and BDC Whiskey Peach BBQ Sauce!! This way you can recreate your delicious BBQ at home for family and friends.

Last but not least. We get a lot of questions regarding cancellations, what to wear, can you book a private class, so on and so forth. Here are just a few questions & answers. We're also including a direct link for additional questions you may have HERE.

  • Can I just show up to a class? No. We'd prefer that you not. We will have all meats and vegetables fresh daily and we will only order enough for those who have booked a class for the evening. First you must check to see which class you're interested in, what day & time is available, and book that class online directly through our website, or through Facebook.

  • What is your cancellation policy for classes? Cooking class and event reservations are just like purchasing theater tickets. We make food purchases on your behalf in advance of the class regardless of your actual attendance. We also have limited space which makes it important for us to have an exact guest count since we often have to turn away potential customers when classes fill. Because we are a 100% reservation based business, we have to adhere to a very specific policy regarding cancellation. Please carefully review this policy below: If you cancel up to 3 days (72 hours) prior to your class, a refund will be issued in the form of class credit only. Within 72 hours prior to your class we CANNOT ISSUE REFUNDS OR CREDIT under any circumstances as we have very limited space available and require advanced reservations for all classes. In the event that we have a waiting list and can fill your space we may issue credit to you, but it is not a guarantee that we will be able to do so. Don’t forget – you can always send someone in your place if you can’t make it, simply let us know and we will make an adjustment to your reservation. We reserve the right to cancel any class, at any time, for any reason. We make every effort to give as much advance notice as possible in the rare event that we do have to cancel a class. Your payment will be refunded in full or you may request credit or transfer of payment to another class. If you are signed up for a series of classes, please note that no refunds will be given after the class has begun, regardless of circumstance because space is limited in these classes.

  • What will we be cooking? If you look under MENU CALENDAR on our bar at the top of our website, you will see the day/date, and what you will be cooking that day or evening. This way you can plan accordingly!

  • Are pictures allowed? Pictures are allowed and encouraged! Our staff love it when you feel that a dish is camera worthy, so please click away! Be sure to share on our Facebook, Instagram, and/or Twitter pages.
